The main purpose of the present thesis is to investigate wine tourism in Northern Greece through the case study of the Gerovassiliou winery in Epanomi of Thessaloniki. More specifically, through the case study of the Gerovassiliou winery and the bibliographic survey that took place, the factors that shape the development of wine tourism are identified and the motives of the wine-grower are analyzed. The research method chosen in this paper is the case study, which helps to explain and the outcome of a phenomenon through its full observation, reconstruction and analysis (Tellis, 1997). In particular, this study aims mainly in exploring the wine tourism sector in Northern Greece. In order to achieve this goal, both quantitative and qualitative data were collected and analyzed in detail in order to extract a conclusive overall picture of the wine tourism sector in Northern Greece. From the bibliographic review and case study of the Gerovassiliou wine-making unit, it has become clear that wine tourism in Europe has developed extensively, while in Greece the wine tourism activity is very new. In recent years, it has begun to grow and be discussed further, without of course being able to compete with what is happening in well-organized foreign wine tourism destinations, but the development of wine tourism in Greece is expected to be both quick and exciting, since our country anyway is an expanded tourist destination with many interesting wine-producing zones. Specifically, Northern Greece, is a very extensive region with three wine regions: the wine region of Hipiros, the Macedonian wine-growing region and the Thrace wine-growing region, which includes some of the most historic vineyards in Greece, with a high potential and good organization, compared to the rest area of Greece. The main reason for the better organization is the Wine Roads of Northern Greece. Finally, during wine touring, wine tasting and the ability to know, test and buy labels that are not available on the wider market and are characterized by originality are of great importance. In addition, modern wine tourists ask to be a part of the place they visit and taste local wines and local dishes but also to take part in the production process, but also in educational and cultural events of the winery and the region.
