Consumption of organic products is gaining more ground year after year. In just a few decades, it has managed to make a transition out from relative obscurity ant into a global phenomenon, with sales exceeding 26 billion. euro. In order to understand this trend, it is necessary to study in detail both the organic production itself and the consumers of these products. In this thesis, we first study what an organic product is and what practices are applied to its production. After a brief mention of some facts concerning the historical course and the market position of organic products nowadays, the results of studies that have attempted to determine the profile and the reasons that push consumers to buy these products are presented. Finally, a study conducted within the framework of this dissertation is presented, with the aim of answering these very questions about the Greek consumer and statistical analysis and discussion of the results are followed.
