The aim of this work is to understand the importance of olive and olive oil in our diet, culture and life especially on the island of Lesvos where the cultivation and production of olive oil is among the first professional occupations of the inhabitants since ancient times and is still ongoing. An example of the wine roads is to make an impression on the similarities between the two valuable elements (olive and wine) and to determine the position and importance of olive trees. Initially the first part refers to Lesvos. We learn its history through the centuries and the main occupation of its inhabitants by producing and harvesting the olives. Below is the conceptual approach and analysis of the olive tree. Then the next part is a retrospective of wine in Greece, but also in Lesvos and in the alternative form that has been created the so-called 'wine roads'. And finally, we care about how the olive could be a good wine-like practice to be an incentive to travel with a view to becoming acquainted with it, in order to develop, optimize, trace, identify areas of natural beauty, identification of olive and olive oil products and their production methods to highlight and improve the nutritional value of the products themselves, at the same time as a better understanding of their relation to human health, well-being and longevity through nature.
