The subject of this paper is the recording of herbs in stores in Thessaloniki and at the same time the systematic classification and the reference to their origin, with emphasis on their medicinal properties.
In the first part of the work, the definition of herbs is given. It is a historical review of use of herbs from antiquity to the present day, based on their healing properties. Also mentioned are the most important ancient Greek botanists and physicians who studied, recorded and used herbs to make medicines to fight various diseases and heal wounds. Then, the ways in which these plants are grown in our country and how they can used are presented.
In the second part, the main herbs that we find in the city of Thessaloniki are developed. For each one, a special reference is made to its characteristics. To the part of the plant, such as root, leaves, seeds which we use for the preparation of thermal treatments. Particural reference is made to the medicinal properties of these herbs. Finally, there are some precautions to be taken, as not all herbs are in the same proportions and are suitable for eating.
The purpose of the dissertation is to study the herbs that we can find in the market of Thessaloniki, their systematic classification and their utilization based on their beneficial properties.
This dissertation includes 40 plants, 50 photographs and the bibliography of the dissertation amounts to 18 book titles and 35 online sources. The number of stores mentioned in the degree is 10. The number of medicinal plants sold as herbs in these stores is between 150 and 200.

| Abstract: | Το θέμα με το οποίο ασχολείται η παρούσα εργασία είναι η καταγραφή των βοτάνων στα καταστήματα της Θεσσαλονικής και παράλληλα η συστηματική ταξινόμηση και αναφορά στην προέλευσή τους, με έμφαση στις φαρμακευτικές τους ιδιότητες.
Στο πρώτο μέρος της εργασίας, δίνεται ο ορισμός των βοτάνων. Γίνεται μια ιστορική αναδρομή για τη χρήση των βοτάνων από την αρχαιότητα μέχρι τις μέρες μας, με βάση τις θεραπευτικές τους ιδιότητες. Επίσης, αναφέρονται οι σημαντικότεροι αρχαίοι Έλληνες βοτανολόγοι και ιατροί που μελέτησαν, κατέγραψαν και χρησιμοποίησαν τα βότανα για την παρασκευή ιαματικών φαρμάκων με σκοπό την καταπολέμηση διαφόρων ασθενειών και επούλωση τραυμάτων. Στη συνέχεια, παρουσιάζονται οι τρόποι που καλλιεργούνται τα φυτά αυτά στη χώρα μας και πως μπορούν να χρησιμοποιηθούν.
Στο δεύτερο μέρος, αναπτύσσονται τα κυριότερα βότανα που συναντάμε στην πόλη της Θεσσαλονικής. Για το κάθε ένα γίνεται ξεχωριστή αναφορά στα χαρακτηριστικά του, στο τμήμα του φυτού, όπως ρίζα, φύλλα, σπόροι τα οποία αξιοποιούμε για την παρασκευή ιαματικών σκευμασμάτων. Ιδιαίτερη αναφορά γίνεται στις φαρμακευτικές ιδιότητες των συγκεκριμένων βοτάνων. Τέλος, παρατίθενται ορισμένες προφυλάξεις που πρέπει να παίρνουμε, καθώς δεν είναι όλα τα βότανα στις ίδιες αναλογίες και περιπτώσεις κατάλληλα για βρώση.
Σκοπός της πτυχιακής εργασίας είναι να μελετηθούν τα βότανα που μπορούμε να βρούμε στην αγορά της Θεσσαλονίκης, η συστηματική τους κατάταξη και η αξιοποίησή τους με βάση τις ευεργετικές τους ιδιότητες.
Η πτυχιακή εργασία αυτή περιλαμβάνει 40 φυτά, 50 φωτογραφιές και η βιβλιογραφία της πτυχιακής ανέρχεται σε 18 τίτλους βιβλίων και σε 35 διαδικτυακές πηγές.
