The present work has as its object the cultivation of the plant Sideritis spp., which grows naturally both in Greece and in other countries located around the Mediter-ranean basin. The aim of the work is to analyze the available data for Sideritis and its cultivation. Initially, there is done a historical flashback for mountain tea with references to antiquity. Afterwards, the areas of Greece in which the various species of Sideritis grow are mentioned, as well as the international and domestic importance of the plant for our country. This is followed by the botanical classification of the species and the morphological characteristics, at first of the genus Sideritis and then more specifically the characteristics of its species. Subsequently the ecological requirements and the cultivation technique are analyzed, which includes propagation and cultivation cares such as soil preparation, dealing with enemies and treatment of diseases, soil fertiliza-tion, irrigation, harvesting, drying and storage. Also with the use of data, the cost of cul-tivation is calculated. The next chapter gives the definition of the essential oil and de-scribes the methods of its reception, the advantages and disadvantages of each method, as well as the chemical composition of the essential oil of mountain tea. Then the uses of the plant and its beneficial properties are pointed out. Reference is also made to the importance of organic farming and its benefits. Next there are the risks faced by the na-tive species and the treatment measures taken, but also the advantages and disad-vantages of both the harvesting of native species and the cultivation of Sideritis. Finally, the problems and prospects of the cultivation of mountain tea are emphasized, as well as the state's strategic plan for its development .
