PURPOSE: Thepurposeofthis dissertation is to check whether and to what extent consumers understand and understand nutrition labels and understand them in terms of utility and reliability. Secondly, it aims to segment consumers on their views on healthy eating habits and to classify them on the basis of demographics, nutritional behavior and their views in relation to food labels. METHOD: The survey was conducted in female and male consumers aged 18+ in the form of a questionnaire. The total sample of the survey was of 1200 individuals, randomized by data collection from April to August 2017, with the most representative sample being Thessaloniki, Pella and Halkidiki. The statistical analysis of the data includes the descriptive statistics of the results and the correlation analysis with the IBM® SPSS® Statistics version 23. Specifically, the correlation analysis was performed with the T-test statistical tests to compare the mean values of two samples and Pearson's X2. The level of significance for the controls was chosen to be equal to α = 0.05 or 5% RESULTS: The most sensitized in the reading of the nutrition label are ages 31-45 with women taking up the highest percentage stating that they always read the nutrition label. In addition, as far as the question of changing the label is concerned, the larger percentage responded that it likes to use more plain words on the labels, while the smallest percentage chose to keep the labels as they are and to make no changes. CONCLUSIONS: Middle age people seem to be more interested in the content of the nutrition label, as they are responsible for the search for healthy foods that will contribute to the proper development of their children. The main role they have is women, since they are the ones who are most involved in buying and preparing food. Besides, there is a desire to change the label by using simpler words. This will result in more modern, legible and understandable food labels from all age groups.
